So, background story. Zainab (Z) of Blahnik Baker and I made a connection over a year ago over the blogosphere (could it be mutual love for food and fashion?) and ever since then we’ve had some pretty fun memories and long conversations, including sending numerous blog photos back and forth for help with title names or does this look a tinge too yellow to helping me finalise a new logo when I rebranded. Last year even we did a blogger gift exchange in which I sent Z a Jamaican themed package (Jamaican savoury and sweet foods authentic to Jamaica) and I just received such an adorable American themed package with gifts I use to this day – including a cute spatula and oven mitten set!

This Apple Candied Walnuts and Blue Cheese Salad with Honey Apple Dressing is filled with fall flavours, sweet and crunchy!

Do you want to know the best part about apples? You can put them in pretty much anything; salads , smoothies , pancakes , pretty much anything. Apples take ordinary recipes and turn them into delicious, flavourful, sweet and crunchy beautiful creations. This salad? No exception. By the time you’re finished with this post, you’re going to want to make this right away.

The Mr. and I are settling into our lives as a married couple, and we have found out something very, very crucial to a happy marriage: a well stocked fridge. I realised that learning to stock a fridge is no easy task, but once you’ve gotten it right (albeit two months into the process) your life has been changed forever. We’ve gone from “cheese is done AGAIN?!” to “wow, four different types of cheese, WHICH shall I use?!”
Food may be the most important thing on our life list.

What a stocked fridge revealed to me other than happy life, happy wife, was that when you accidentally go crazy and pick up 2 dozen apples for TWO people, you find many, many ways to use them. You eat them whole, you slice them up and eat them, you caramelise them (lots, and lots of caramelising them), you add them to tons of hors d’oeuvres and eat them while binge watching Netflix…the list goes on.
Did I mention LOTS of caramelising them?
The last time I made an apple salad , it seemed to be really popular among everyone, so I thought, why fix what ain’t broke?

So, I recreated my favourite apple salad and present the recreation to you here. I mean, who can resist the mixture of apples, candied walnuts, dried cranberries, and my favourite, tart, beautiful blue cheese?! If that wasn’t already magical enough, pour a honey-apple salad dressing all over it and push it in front of someone. Actually, push it in front of me, I promise you won’t have to twist my arm for me to eat it in one go.
What do I love the most about this salad? It’s good for you AND delicious. Cue less than 15 minutes, FULL of flavour, very filling, easy to stuff dow-…to eat peacefully with a fork (ahem) and full of fresh delicious ingredients. You can have this salad as a side and split it or as a main, whichever your heart desires.

As an ode to the Mr. on his birthday (Happy Birthday My Amazing Husband!) I have to mention that he was the genius behind the apple salad dressing. He’s a pro at anything sauces and dressings (okay okay, and everything cooking) and this is the perfect combination of sweet and tangy that’ll complement the salad perfectly. He’s also the reason behind my complete love of brine-y ingredients such as blue cheese and finding perfect complementary ingredients. On that note, you could easily use feta cheese as it adds that perfect tang flavour if you want, or both (I won’t tell).
Feel free to enjoy this salad before it’s actually fall and remember, it’s totally okay to add some of that extra blue cheese on top. Yes, I can read your mind.
