Admittedly, it never gets cold here in the daytime. But we seem to have our own version of “winter”. Every Christmas season, it gets nice and cold in the night. I went outside for something the other night and I was shocked at how cool it was. When we’re downstairs in the living room, leaving the back patio door open is more than enough to keep us cool with the fan. When we’re at a friends house who live-in the hills, I have to bring a sweater. Plus, it rains all the time now, so I’m constantly wanting more warming and comforting things.

So whether it snows by you, or gets really cold, just gets really cool, or stays the same, at the end of the day, this roundup is an ode to the comforting and cozy recipes. The ones that make our houses feel like a home. Plus, I know people are always pressed as to what vegan breakfasts to make, so here’s a whole bunch!

The best news is that I have included some low carb options too! So you can still enjoy your chocolatey breakfasts, your waffle-y breakfasts, and your Caribbean breakfasts!

Cinnamon Apple Maple Quinoa

This Spiced Mulled Wine is made easily in 20 minutes! It’s simmered with warm spices, slightly sweetened with simple syrup and so cozy!

Have you had mulled wine before? If not, your life is about to change. Take everything you love about wine, red or white. Now turn it into a warm and cozy version that is perfect for every fireplace, tree, holiday party and dinner. This may have been the holiday drink missing from your life this whole time.

The history of mulled wine is quite interesting and it’s exactly what I thought it would be. Of course most of the things we enjoy now had a solid purpose – the Romans, loaded with wine , would heat it to defend their bodies against the cold winter. Makes total sense right?! That love spread, and here we are today, discussing it over a cuppa.

My favourite part about it is that it’s so easy to make and similar to apple cider. Heat the wine with your favourite spiced cider ingredients. Mine would be cinnamon sticks, star anise, cloves and slices of oranges. You can totally play it up or down with even more ingredients. I actually used my cranberry rosemary simple syrup to sweeten this, so the world is your oyster here friends.

After that, you heat it on medium to low heat for 20 minutes. You don’t want it to go above a slight simmer – and definitely not a boil (you’ll lose half the wine that way). After it’s heated through, serve and enjoy! I stir in a tablespoon at a time of simple syrup until it reaches my desired sweetness, so I would suggest the same for you. P.S. this would be a perfect part of your hygge routine!

Ingredients

  • 1 750ml bottle red wine (we love Malbec)
  • 1 orange , sliced
  • 1 tablespoon whole cloves
  • 3 star anise pods
  • 3 cinnamon sticks
  • ¼ cup simple syrup

Instructions

  • Add the wine and all the other ingredients except the simple syrup to a pot. Bring to a medium-low heat, and stir together. Allow to simmer slightly for 20 minutes. Remove from heat, serve and enjoy! Feel free to sweeten it with simple syrup of your choice such, such as my cranberry rosemary simple syrup.
