All you need are frozen bananas, and your favourite fruit for your desired ice cream flavour. In ten minutes, you have frozen, scoop able ice cream. Yes, I was shocked too when I found out about it, and it was by mistake, too. It all happened when I was making a smoothie bowl. I was so proud of my self that I had diligently remembered to freeze my bananas so I wouldn’t have to add ice (Jessica 1 – 0 Watery Smoothie). The very first time I put the frozen bananas in a food processor before adding the rest of my smoothie ingredients I didn’t expect anything extraordinary to happen. I just wanted to mash them together before adding in everything else. As we all usually do, I got distracted and went on my phone – hello cat videos. A few minutes later I remembered where I was and looked down at the food processor. What was once hard frozen banana coins was now a creamy, soft-serve like consistency.

“What?!” Was my first thought. Then, “this is just like making peanut/almond/cashew butter!!” I googled “ice cream made with bananas” and the nice cream world came tumbling towards me. It was as if I had unlocked a secret level on my favourite video game, or found a magical section on Netflix of unlimited series. Anyway, I was hooked.

One taste and you’ll also be in love. Fruity, creamy, delicious vegan blueberry ice cream and so easy. You can actually serve it immediately for a soft serve consistency or freeze it up to get a thicker consistency. Like I said, either way, you’ll be hooked.

  • 4 large bananas , frozen
  • 2 cups frozen blueberries
  • For garnish , coconut flakes and more blueberries

Instructions

  • Add the bananas to a food processor and blend. They will break into hard pieces, and will begin to blend into a smooth cream after a few minutes of blending.
  • Add the blueberries in as soon as they become creamy. Blend together until combined.
  • Served immediately or add to a freezer safe container in the fridge and freeze for at least 2-4 hours.
  • Scoop and enjoy!

This Coconut Kiwi Green Smoothie Bowl is a delicious tropical smoothie bowl, perfect for quick mornings and takes only 10 minutes to make!

By the time you read this, the Mr. and I will be on our way to Tulum, Mexico for our first anniversary (how has a year passed already??). Hopefully, we’ll be having smoothie bowls for breakfast and vegan tacos for every meal possible. There’s something very satisfying about starting the day with a smoothie bowl. I end up feeling like a complete superstar. Almost as I can actually complete everything on my to-do list and run a 5k marathon. Minus the 5k marathon part, of course. They’re bright, gorgeous, super tasty, and so easy. Best part about this one? Only 5 ingredients and 10 minutes. Hello, summer.

Without a doubt, I’ve become that smoothie bowl girl. How could I not?! Food in bowls are always better. You get to put beautiful toppings on them, serve them in beautiful bowls or coconut shells, and play mini artist with designs. I used my favourite green smoothie recipe, increased the bananas and added some chia seeds to make it deliciously thick so that you can drink it with a spoon. I added kiwis, hemp seeds, granola and coconut flakes on top but you can add any range of toppings your heart desires.

The smoothie is made up on pineapples, bananas, spinach, orange juice and chia seeds. The kiwi amps up the tropical-ness of it, and all the accompanying toppings that I chose do too. The coconut flakes are a delicious texture addition plus coconut is delicious, and the granola hemp seeds alongside the chia ness help ensure that you’ll stay full.

If you can, serve it up in a coconut bowl. It actually tastes SO much better with the delicious coconut flavour!

Ingredients

  • 3 slices of pineapple
  • 2 cups fresh spinach , washed and stems removed
  • 2 frozen bananas
  • 1/3 cup orange juice
  • 1 tablespoon chia seeds

Toppings:

  • coconut flakes
  • granola
  • 1 kiwi , cut in half
  • hemp seeds

Instructions

  • Blend all together in a high power blender – I use a nutri bullet.
  • Top with desired amount of toppings.
  • Serve and enjoy!
